A relish is a cooked pickled, chopped vegetable or fruit food item
which is typically used as a condiment.

First lets talk about what a relish is:
"The item generally consists of discernible vegetable or fruit pieces in a sauce, although the sauce is subordinate in character to the vegetable or fruit pieces. It might consist of a single type of vegetable or fruit, or a combination of these. These fruits or vegetables might be coarsely or finely chopped, but generally a relish is not as smooth as a sauce-type condiment, such as ketchup. The overall taste sensation might be sweet or savory, hot or mild, but it is always a strong flavor that complements or adds to the primary food item with which it is served."

Pickle Relish: "In the United States, the most common commercially available relishes are made from pickled cucumbers and are known in the food trade as pickle relishes. Two variants of this are hamburger relish (pickle relish in a ketchup base or sauce) and hotdog relish (pickle relish in a mustard base or sauce). Other readily available commercial relishes in the United States include corn (maize) relish. Heinz, Vlasic, and Claussen are well known in the United States as producers of pickles and relishes. The best known manufacturer of pickle in the UK is probably Branston."
Mustard Relish Recipe
Grind tomatoes, onions, red and green peppers. Drain well. In large kettle bring vinegar, salt, turmeric and sugar to boil. Add ground vegetables. Use 1 cup flour and enough water to make paste. Stir into relish for thickness. Add yellow mustard. Bring to boil and jar and seal.
Sweet Cucumber Pickle Relish
Soak cucumber chips in lime and water for 24 hours. Rinse the lime off and soak in clear water 3 hours. Rinse and soak 12 hours in the sugar and vinegar. Tie the spices in a cloth bag and place it with the soak also. Boil the cucumbers in this vinegar syrup and spice solution 45 minutes. Pack the hot pickle into hot jars and seal. If you want to make relish split the cucumbers into fourths or eighths lengthwise. This makes the soaking the rinsing easier. Grind the cucumbers before the syrup soak and cooking steps.
Pickle Relish
- 1 gal. cucumbers, chopped
Mix chopped cucumbers with 4 tablespoons salt and 4 cups water. Let stand until you get onions and peppers cut up. Drain, add remaining ingredients and boil 20 minutes. Put in sterile jars and seal.

Sauercraut: "Sauerkraut may be eaten raw and unadorned; in this form it is often eaten as a relish with meat dishes. (popular on hot dogs) Raw sauerkraut dressed with oil and onions is served as a salad, while warmed sauerkraut is also commonly served on a Reuben sandwich. Reuben hot dogs are dogs made just like a reuben sandwich- What is a Reuben Sandwich you ask? It's a grilled or toasted sandwich made with corned beef, sauerkraut, Swiss cheese, and Russian or Thousand Island dressing. (Several variants exist) If your making a Reuben hot dog, the weenie type is your choice and served hot with cheese melted. Sauercraut Recipe
Chow-Chow: "Chow-chow, sometimes spelled Chowchow, is a relish made from a combination of different vegetables: green and red tomatoes, cabbage, carrots, beans, asparagus, cauliflower and peas, which are pickled in a jar and served cold. The name is based on the French word chou for cabbage. Chow-chow is regionally associated with Pennsylvania and the southern United States, though the recipes vary greatly. Pennsylvania chow-chow, best known under the Wos-Wit brand, is generally much sweeter than the southern varieties. Southern varieties can be sweet to hot. Chow-chow can be eaten by itself or can be used as a condiment."
Corn Relish: Corn relish is very colorful and flavors very well on top of hot dogs. "Corn relish is a traditional Southern United States family recipe for cooked whole corn kernels, spiced with red and green bell peppers, peppercorns, and equal parts sugar and cider vinegar. During the winter months, canned corn relish is taken from the pantry and opened at the table, given as a garnish or side dish to the typically meat-and-potatoes dinner fare. Corn relish is cooked on the stove, and placed in sterile covered containers and stored in the refrigerator or freezer. Variations on the recipe include the addition of chopped tomatoes, sliced cucumbers, dill seed, or mustard seed." This variation is also a favorite on hot dogs.
Sweet Shoe-Peg Corn Relish:
Ingredients
- 1 can White shoe-peg corn
- 1 Jar (small) chopped pimento
- 1 cup Green onions; chopped
- 1 to 1/2 cup of bell pepper
- some sweet vidalia onion - optional
Instructions
Place all ingredients (except those for marinade) in a container that can be closed. In a saucepan bring to a boil the items listed for marinade. Let cool and pour over vegetable mixture. Let marinate several hours, refrigerate. Serve cold over hot dogs-
Raw Garden Relish: Raw garden relish is raw (not cooked) diced up veggies that go well with hot dogs. A easy relish would be equal amounts of red tomatoes, even green tomatoes, cucumbers, onion, celery, red green yellow or orange bell pepper, carrot, cabbage, etc-
Cooked Garden Relish: 1 qt. chopped cabbage, 3 1/2 c. chopped onions, 2 c. green peppers, chopped, 4 c. chopped green tomatoes, 2 c. chopped red peppers, 1/2 c. salt, 1 1/2 c. brown sugar, 3/4 c. white sugar, 1 1/2 tsp. celery seed, 4 c. apple cider vinegar,1 tsp. turmeric, 1/2 tsp. ground ginger, 1/2 tsp. dry mustard
Mix all vegetables with salt and soak for 2 hours; drain well. Mix vinegar and spices. Simmer 10 minutes. Add vegetables and simmer 30 minutes. Pack hot into jars and process 15 minutes in hot water bath.
