Cherry macaroons are a light and tasty treat that can be made up to a week ahead before they're needed. This recipe uses glace (glazed) cherries, available in your supermarket baking area. This recipe should make around 70 macaroons, which is perfect for a week's supply of snacks or for a large afternoon tea function.

Ingredients
• 3 cups / 270g coconut
• 400g can sweetened condensed milk
• 1/2 cup chopped green glace cherries
• 1/2 cup chopped red glace cherries
• 1 cup / 90g coconut, extra
• 1/4 cup green glace cherries, quartered, extra
• 1/4 cup red glace cherries, quartered, extra

Steps
1) - Mix together the coconut, condensed milk and chopped glace cherries in a bowl. Stir well.
2) - Roll 2 level teaspoons of the mixture into a ball shape. Repeat until all the mixture is used.
3) - Roll each ball in the extra coconut. Add a quartered cherry at the top for decoration.
4) - Place each macaroon on a cookie sheet/baking tray about 3 cm/1.5" apart.
5) - Bake in a moderate oven (350ºF/180ºC) for 15 minutes or until lightly browned. Do not allow to become too brown.
6) - Remove baked macaroons from the oven and allow to cool on wire cooling racks.
7) - Serve or store in an airtight container.

Fun Food Fact: Nutritional value of a cherry
Cherries contain anthocyanins, the red pigment in
berries. Cherry anthocyanins have been shown to
reduce pain and inflammation in rats. Anthocyanins
are also potent antioxidants under active research for a variety of potential health benefits. According to a study funded by the Cherry Marketing Institute presented at the Experimental Biology 2008 meeting in San Diego, rats that received whole tart cherry powder mixed into a high-fat diet did not gain as much weight or build up as much body fat, and their blood showed much lower levels of inflammation indicators that have been linked to heart disease and diabetes. In addition, they had significantly lower blood levels of cholesterol and triglycerides than the other rats.
