Pie Themes
The beautiful photo above was taken by cobalt123 from flickr.com. This is a great example of how baked pies can be made into any theme just by changing the cut outs of the crust itself. The heart shape crust on this red strawberry pie is just perfect for Valentines Day. It's even a great pie to bake for an anniversary party too. Use your imagination and think up some other great shapes to celebrate your special day. It's really easy to do and impressive too.

Baked Strawberry Pie
3 c. strawberries
1 c. sugar
2 tbsp. flour
1/2 c. cream or milk
2 eggs, beaten
Beat all together except strawberries. Put berries in unbaked. Pour mixture over berries. Bake at 350 degrees for 45 minutes or until set.

NO BAKE STRAWBERRY PIE
1 pkg. Dream Whip
1 tsp. vanilla
1 (8 oz.) pkg. cream cheese
2/3 c. powdered sugar
1 graham cracker pie shell
Beat Dream Whip; add vanilla, cream cheese and powdered sugar. Pour in graham cracker pie shell. Pour strawberry over pie filling. Chill until ready to eat. Can use any other pie filling.

Strawberry Tart with Almond Cream
Crust:
1 1/2 C. flour
1/4 C. confectionary sugar
1/2 t. baking powder
1 egg
8 T. cold butter
In a medium bowl, combine the flour, sugar and baking powder. Mix well. Cut in the butter with a pastry cutter. Add the egg and mix until the dough forms a ball.
On a lightly floured board, roll out the dough to 1/8 inch thick. Fit the dough into a 9 1/2 inch fluted tart pan. Prick the bottom of the tart shell with a fork. Chill for at least 30 minutes.
Almond Cream Filling:
8 T. butter softened
1/2 C. slivered almonds finely ground
1/3 C. sugar
1/4 C. flour
1 egg
Combine all the ingredients in a bowl and beat until smooth. Spread out in the bottom of the tart pan. Bake at 350°F. for about 30 minutes, until the crust is golden and the filing lightly browned. Cool.
To serve:
Spread a thin layer of strawberry jam over the almond cream. Clean and half about 4 Cups fresh strawberries. Starting with the outside edge, arrange strawberries, cut side down. Sprinkle the strawberries with 2 T. confectionary sugar or you can use apricot jelly melted and brush it on.

Fresh Strawberry Pie
1 cup sugar
1 pound strawberries, washed, hulled, and sliced
1/4 cup water
1 tablespoon butter
2 tablespoons plus 1 teaspoon cornstarch
Combine sugar and strawberries; let stand for a few hours, until juicy. Drain juices off; transfer to saucepan, and bring to a boil. Mix together the water, butter, and cornstarch. Add to the strawberry juice mixture; continue cooking, covered, over low heat for 2 minutes. Cool slightly and stir in strawberries. Pour into baked pie shell; chill thoroughly. Top with whipped cream topping or purchased whipped topping. Keep leftovers covered, in refrigerator.
